Wood-Roasted Cherry Vine Tomatoes
- 3 pounds cherry tomatoes
- ¼ cup olive oil
- 1 bunch fresh thyme in small sprigs
- 3 garlic cloves, peeled and thinly sliced
- coarse sea salt and freshly ground black pepper
Wood fired oven temperature at around 400° F. Place the tomatoes in an oiled roasting pan. Scatter with thyme and garlic. Drizzle with oil and season. Roast for 20 minutes.
You can use these roasted tomatoes to compliment an entrée or a salad or you can use on spaghetti.
